This is the kind of dressing that quietly does a lot of heavy lifting. Bright, punchy, and unapologetically classic, it brings everything on the plate into focus—no fuss, no overthinking, just really good balance.

Ingredients
  

  • ¼ cup extra-virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 garlic clove, minced
  • ½ tsp dried oregano, plus more for finishing
  • ¼ tsp Dijon mustard
  • ¼ tsp sea salt
  • freshly ground black pepper

Method
 

  1. In a small bowl, whisk together the olive oil, red wine vinegar, garlic, dried oregano, Dijon mustard, sea salt, and several grinds of black pepper until fully combined and emulsified.

Notes

Use immediately to dress a classic Greek salad, or keep it on hand as a go-to vinaigrette for roasted vegetables, grilled proteins, or anything that needs a bright, Mediterranean finish. Just before serving, sprinkle a little extra oregano over the top—it’s a small detail, but it makes it feel intentional.
