- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, dried oregano, Dijon mustard, sea salt, and several grinds of black pepper until fully combined and emulsified.

Use immediately to dress a classic Greek salad, or keep it on hand as a go-to vinaigrette for roasted vegetables, grilled proteins, or anything that needs a bright, Mediterranean finish. Just before serving, sprinkle a little extra oregano over the top—it’s a small detail, but it makes it feel intentional.
