Oven-Baked Parmesan Cauliflower with Garlic

Ingredients
  

  • 1 head of cauliflower
  • 1/4 cup olive oil
  • 1/3 cup grated Parmesan cheese
  • 2 garlic cloves, minced (2 teaspoons)
  • 1/2 tsp kosher salt or more to taste
  • 1/4 teaspoon ground black pepper or more to taste

Method
 

  1. Preheat the oven to 425°F (218°C). Line a large baking sheet with parchment paper.
  2. Remove the leaves, core, and large stems of the cauliflower. Cut the cauliflower into bite-sized florets. Avoid cutting them too small, as they may dry out too much while roasting. Rinse thoroughly under cool water, then pat dry with a paper or cloth towel.
  3. In a large bowl, combine the olive oil, grated Parmesan, minced garlic, salt, and pepper. Add the cauliflower florets and toss until evenly coated.
  4. Arrange the florets in a single layer on the prepared baking sheet to ensure even roasting. Roast for 20–30 minutes, flipping once or twice, until golden brown. Check periodically during roasting to ensure they do not burn, as the size of the florets will affect cooking time.
  5. Transfer the roasted cauliflower to a serving bowl. Garnish with fresh parsley, additional Parmesan, or other preferred toppings. Serve immediately.
