Butterscotch Peanut Butter Marshmallow Squares

No-bake butterscotch peanut butter marshmallow squares made with simple pantry ingredients. A quick, retro dessert that sets in the fridge and is perfect for potlucks, holidays, and make-ahead treats.

Ingredients
  

  • 1 (11 oz) package butterscotch chips
  • 1 cup peanut butter
  • 1 cup butter
  • cups miniature marshmallows
  • 1 cup flaked coconut (optional)
  • 1 cup chopped walnuts (optional)

Method
 

  1. Grease a 9×13-inch pan or line with parchment paper.
  2. In the top of a double boiler over simmering water, melt the butterscotch chips, peanut butter, and butter, stirring frequently and scraping down the sides, until smooth (about 5 minutes).
  3. Remove from heat and stir in the marshmallows, coconut, and walnuts (if using) until evenly combined.
  4. Spread the mixture evenly into the prepared pan.
  5. Refrigerate until set, about 1 hour. Cut into squares and store in the refrigerator.
