  • 1 can corn, drained
  • 1 can black beans, drained
  • 1 can lentils, drained
  • 1 cup green onions, chopped
  • 1 cup celery, chopped
  • 1 cup green pepper, chopped
  • 1 cup red pepper, chopped
Dressing:
  • 3/4 cup apple cider vinegar
  • 1/2 cup olive oil
  • 1/2 cup sugar
  • salt and pepper to taste

Method
 

  1. In a large bowl, combine the corn, black beans, lentils, green onions, celery, green pepper, and red pepper.
  2. In a small saucepan, combine the apple cider vinegar, olive oil, sugar, salt, and pepper. Bring to a boil, stirring until the sugar dissolves.
  3. Let the dressing cool, then pour it over the veggie and bean mixture.
  4. Cover and let sit overnight in the refrigerator to allow the flavors to meld.
  5. Serve chilled with tortilla chips.
