Lentil & Feta Bean Dip with Basil

Ingredients
  

For the dip:
  • 1 can lentils, drained and rinsed
  • 1 can sweet corn, drained
  • 1 cup cherry tomatoes, halved
  • 3/4 cup feta cheese, crumbled
For the dressing:
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup fresh basil, chopped

Method
 

Prepare the dip base:
  1. In a medium sized bowl, combine the lentils, sweet corn, cherry tomatoes, and crumbled feta cheese.
Make the dressing:
  1. Combine olive oil, lemon juice, minced garlic, a pinch of salt, black pepper, and chopped basil in a small bowl, whisking until the flavors come together nicely.
Combine:
  1. Pour the dressing over the lentil mixture and gently toss until everything is evenly coated.
Serve:
  1. Spoon into a serving bowl and enjoy with crunchy tortilla chips, crisp crackers, or as a bright, fresh topping for your favorite salads.
