Amalfi Lemon Ricotta Torta

This Italian lemon ricotta cake is light, refreshing, and beautifully balanced, with a tender crumb enriched by creamy ricotta and extra-virgin olive oil. Ingredients
  

For the cake:
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • 1⅓ cups granulated sugar
  • ½ cup extra-virgin olive oil
  • 3 large eggs
  • 1 cup smooth ricotta cheese
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
For the lemon glaze:
  • ½ cup icing sugar
  • 2 tbsp fresh lemon juice

Method
 

  1. Preheat the oven to 350°F (175°C). Spray a 9-inch springform pan with nonstick cooking spray.
  2. Zest both lemons into a large mixing bowl. Squeeze enough juice to measure ¼ cup and add it to the bowl.
  3. Add the granulated sugar, olive oil, eggs, and ricotta cheese. Whisk until smooth and well combined.
  4. Add the flour, baking powder, baking soda, and salt. Whisk just until combined—do not overmix.
  5. Pour the batter into the prepared pan.
  6. Bake for 38 minutes, or until a toothpick inserted in the center comes out clean. Be careful not to overbake.
Glaze the cake
  1. While the cake is still warm, poke small holes all over the surface with a toothpick.
  2. Stir together the icing sugar and lemon juice until smooth. Drizzle evenly over the warm cake, allowing it to soak in.
