Easy Homestyle Meatloaf (Beef, Pork, or Blend)

This easy homestyle meatloaf is made with juicy ground beef (or pork, or both!), STOVE TOP stuffing mix, eggs, onion, and a splash of barbecue sauce for bold, savory flavor. Moist, hearty, and weeknight-friendly, it’s a comforting classic that comes together quickly with simple pantry ingredients.

Ingredients
  

  • lb ground beef, or pork, or both
  • 1 box STOVE TOP Stuffing Mix
  • ¾ cups water
  • 1 small onion, finely chopped
  • 1 tbsp barbecue sauce (for the meat mixture), optional
  • 2 eggs, lightly beaten
  • cup barbecue sauce, (for topping the meatloaf)

Method
 

  1. Preheat the oven to 375°F. In a large bowl, mix together the ground meat, stuffing mix, water, eggs, onion, and optional barbecue sauce until well-combined.
  2. Shape the mixture into an oval loaf and place it in a deep, parchment-lined baking dish (not a baking sheet). Spread the barbecue sauce evenly over the top, then cover with aluminum foil.
  3. Bake for 50 minutes. Remove the foil and return to the oven for an additional 10 minutes, allowing the top to set and lightly caramelize.

Notes

Note: The barbecue sauce you choose will influence the flavor of the meatloaf, so pick one you love. You don’t need more than about a tablespoon in the meat mixture itself—the meat will taste great even without it. I like to add just a little to give it a subtle kick.
Important: I recommend baking this meatloaf in a deep dish, such as a Pyrex lasagna dish or roasting pan, to catch the grease that will render from the meat and keep it from spilling all over your oven.
