Prepare the Crab Salad
- In a medium mixing bowl, combine the diced imitation crab, chopped green onion, celery (if using), and mayonnaise.
- Stir gently until evenly coated.
- Cover and refrigerate for at least 2 hours to allow the flavours to blend.
Assemble the Sandwiches
- If using baguette slices, arrange them on a serving platter.
- If using mini croissants, slice in half horizontally and place open-faced on a platter.
- Spoon a generous amount of the chilled crab salad mixture onto each piece.
Garnish and Serve
- Top each with a fresh parsley leaf and a tiny piece of lemon.
- Serve cold.
